Introduction

It is important to guarantee the quality, origin and flavour of aliments such as honey, juice or nectars. This invention has created a new method for the analysis of the quantity and type of sugars present in complex foods with the NMR CSSF TOCSY technique, that can identify and quantify simultaneously the kinds of sugars present in honey, fruit juice, milk or wine.

Technical features

A food industry with high quality standards must protect its products from low cost  adulterated food. In order to guarantee the quality and authenticity of aliments such as honey, fruit juice or nectars it is important to have detailed information on the kind and quantity of sugars they contain.

The more common methods used to quantify sugars and oligosaccharides are based on separation techniques such as HPLC and GC, but they do not yield precise results on different instruments.

This invention has created a new method for the analysis of the quantity and type of sugars present in complex foods with the NMR CSSF TOCSY technique, that can identify and quantify simultaneously the kinds of sugars present in honey, fruit juice, milk or wine with greater accuracy. It will be useful to identify if corn syrup have been added to honey or if fruit juice contains more sugar than what is declared.
